Lemon Cake with Honeyed Raspberry Cream Frosting



Ingredients
For the Cake

  • 7 eggs, separated
  • 1 teaspoon finely ground sea salt
  • 1 cup granulated sugar
  • 2 tablespoons finely grated lemon rind
  • 1 tablespoon lemon extract
  • 1½ cups all-purpose einkorn flour, sifted


For the Honeyed Raspberry Cream Frosting

  • 2 (12-oz) packages frozen red raspberries
  • ½ cup honey, preferably raspberry blossom honey
  • 1 Tablesooon lemon juice
  • 2 (8-oz) containers mascarpone cheese
  • 1 pint heavy whipping cream
